- 3-4 stalks of lemongrass, bruised
- 2-3 pieces of tamarind pulp, soaked in water
- 3-4 pieces of dried chili, soaked in hot water
- 3-4 cloves of garlic
- 1-inch piece of ginger
- 1 teaspoon of coriander powder
- 1 teaspoon of cumin powder
- 1 teaspoon of turmeric powder
- 1 tablespoon of oil
- 1 liter of water
- Salt and sugar to taste
- 1 handful of daun kesum (Vietnamese mint)
Instructions
Here are the steps to make Daging Singgang Kelantan:- Blend the soaked chili, garlic, and ginger until it becomes a paste.
- Heat the oil in a pot and sauté the chili paste until fragrant.
- Add in the coriander powder, cumin powder, and turmeric powder. Stir well.
- Add in the beef and stir until it is evenly coated with the spice mixture.
- Next, add in the water, lemongrass, and tamarind pulp. Bring it to a boil.
- Add salt and sugar to taste.
- Reduce the heat and let it simmer for 30-40 minutes, or until the beef is tender.
- Add in the daun kesum and let it simmer for another 5 minutes.
- Remove from heat and serve hot with white rice.
