Ingredients

For the Spice Paste:

  • 10 dried red chilies, seeded and soaked in hot water
  • 5 shallots, peeled and roughly chopped

  • 1-inch piece of ginger, peeled and roughly chopped
  • 1-inch piece of galangal, peeled and roughly chopped
  • 1 lemongrass stalk, tender white part only, roughly chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder

For the Rendang:

  • 2 pounds beef chuck or brisket, cut into 2-inch cubes
  • 2 cans coconut milk (13.5 ounces each)
  • 4 kaffir lime leaves
  • 2 lemongrass stalks, bruised
  • 1 cinnamon stick
  • 3 star anise
  • 3 cardamom pods
  • 1 tablespoon tamarind paste
  • 1 tablespoon palm sugar or brown sugar
  • Salt to taste
  • Water as needed

Instructions

Follow these instructions to make Rendang Minang Daging:

  1. Prepare the spice paste by blending all the ingredients in a food processor until smooth. Set aside.
  2. In a large pot or Dutch oven, heat some oil over medium-high heat. Add the beef cubes and sear on all sides until browned. Remove from the pot and set aside.
  3. Add the spice paste to the pot and cook over medium heat for about 10 minutes, stirring occasionally, until fragrant.
  4. Add the seared beef cubes back to the pot and stir to coat with the spice paste.
  5. Pour in the coconut milk and add the kaffir lime leaves, lemongrass stalks, cinnamon stick, star anise, and cardamom pods. Stir to combine.
  6. Bring to a boil and then reduce the heat to low. Simmer for about 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
  7. Add the tamarind paste, palm sugar, and salt to taste. Stir to combine.
  8. If the sauce is too thick, add some water to thin it out. If it is too thin, let it simmer for a bit longer until it thickens.
  9. Remove from heat and let it cool for a few minutes before serving.
