Here are the ingredients you will need to make Rendang Daging Terengganu:- 1 kg beef, cut into cubes
- 2 cups thick coconut milk
- 1 cup thin coconut milk
- 2 lemongrass stalks, bruised
- 6 kaffir lime leaves
- 2 turmeric leaves, shredded
- 1 tsp tamarind paste
- 1 tbsp sugar
- Salt to taste
- 15 dried chillies, soaked in hot water and deseeded
- 10 shallots
- 5 garlic cloves
- 2-inch ginger
- 1-inch galangal
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
Instructions
1. Blend all the ingredients for the spice paste in a food processor until smooth. 2. Heat some oil in a pot and fry the spice paste until fragrant. 3. Add the beef cubes and stir-fry for 5 minutes until the beef is browned. 4. Add the thick coconut milk, thin coconut milk, lemongrass, kaffir lime leaves, turmeric leaves, tamarind paste, sugar, and salt. Stir well. 5. Bring to a boil, then reduce the heat and let it simmer for 2-3 hours until the beef is tender and the sauce has thickened. 6. Stir occasionally to prevent the sauce from sticking to the bottom of the pot. 7. Once the beef is tender and the sauce has thickened, remove from heat and let it cool before serving.Nutrition
