Gulai Daging Utara Recipe

Ingredients
- 1 kg beef, cut into cubes
- 3 cups coconut milk
- 1 cup water
- 2 stalks lemongrass, bruised
- 5 kaffir lime leaves
- 2 turmeric leaves
- 3 tbsp tamarind juice
- 1 tbsp salt
- 1 tbsp sugar
- 1 tbsp kerisik (toasted coconut)
For the spice paste:
- 10 dried chilies, soaked in hot water
- 5 shallots
- 3 cloves garlic
- 1 inch ginger
- 1 inch galangal
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
Instructions
1. In a blender or food processor, blend all the ingredients for the spice paste until fine.
2. In a pot or wok, heat up some oil and sauté the spice paste until fragrant.
3. Add in the beef cubes and stir well until the meat changes color.
4. Pour in the coconut milk, water, lemongrass, kaffir lime leaves, and turmeric leaves.
5. Stir well and bring to a boil. Lower the heat and let it simmer for 1-2 hours or until the meat is tender.
6. Add in the tamarind juice, salt, and sugar. Stir well and let it simmer for another 10-15 minutes.
7. Lastly, add in the kerisik (toasted coconut) and stir well.
8. Serve hot with steamed rice or any other side dish of your choice.
