Instructions

  1. Begin by making the curry paste. Drain the soaked red chilies and blend them in a food processor with the turmeric powder, coriander powder, cumin powder, fennel powder, garlic, onion, and ginger until you have a smooth paste.
  2. Heat the oil in a large pot and add the cinnamon stick, cloves, cardamom pods, and star anise. Fry for a minute until fragrant.
  3. Add the sliced onion and minced garlic to the pot and fry until the onion is soft and translucent.
  4. Add the curry paste to the pot and fry for a few minutes until fragrant.
